I hope you’ve had a lovely weekend, filled with rest and relaxation. I spent my Sunday afternoon battling my allergies (they won for a bit, and I took a two hour nap – oops) and spent my Sunday evening saying things like, “Does it really have to be Monday tomorrow?” (Mature, right?)
I did manage to be productive in a few ways (if you count getting your golden retriever a touch-up shave for his lion cut), one of which was accidentally creating the most delicious, savory Whole30 compliant breakfast. I say “accidentally” because when it comes to Whole30, I’m better at abiding by the full-length approved shopping list than working with a specific recipe. I much prefer to throw whatever I’m craving into a pan and just go with it. And this time . . . oh, man. Talk about a major weekend win and me falling in all kinds of love with sauteed kale.
Whether you’re on Whole30 or just want to keep it simple and healthy in the morning, keep on reading for my new favorite breakfast recipe.
Ingredients:
- Kale (You can find a giant bag at Costco.)
- Cherry Tomatoes (I love the assorted container – also found at Costco.)
- Aidells Chicken & Apple Sausage (Because it’s Whole30 Approved – Costco!)
- Olive Oil
- Himalayaen Sea Salt
- Black Pepper
Steps:
- Pour 1 tablespoon olive oil in stove top pan. Swirl the olive oil around until the pan is completely coated.
- Throw a handful of kale leaves into the pan (completely covering the bottom of the pan). Add salt and pepper. Drizzle a half tablespoon of olive oil over the kale.
- Toss about 5 cherry tomatoes in with the kale.
- Slice one Aidell’s Chicken & Apple sausage into sections and toss in with the kale and cherry tomatoes. (The best thing about this brand is these little babies come pre-cooked! So, it’s okay to throw it in all together with our veggies! We’re really just heating the sausage up with the veggies while they cook – which means we’re going to get the benefit of the sausage’s flavor mixed in with the kale and tomatoes – YASSS.)
- Do your thing, whether it’s brushing your teeth or watching the news. When you hear the kale start to sizzle (it’ll sound like a rain shower), start stirring the ingredients around in the pan so the kale starts to wilt and the sausages and tomatoes get a light sear.
- About 5 minutes after the kale starts crackling (and after 10 minutes of cooking total), pour the ingredients into a bowl and enjoy a quick and healthy – and super savory – breakfast!
Pro Tip: Want some protein in the morning but don’t eat meat? Crack an egg or two over the kale and tomatoes instead.
